titleOfInvention Process for converting phytate from phytate-containing food into inorganic phosphate
abstract A process for converting phytate in a food into inorganic phosphate comprising the steps of: (i) mechanically mixing a slurry comprising: 100 parts by weight of the phytate-containing food, 60-1000 parts by weight of a solvent mixture which comprises water and a water-immiscible organic solvent having a boiling point of 20-100oC, the water-immiscible organic solvent constituting 20-85% by wt. of the solvent mixture, and a phytase; and (ii) drying the food to remove the organic solvent. Also described is a process for producing an animal feed or a human food comprising the steps of converting phytate in a food into inorganic phosphate according to the process described above and mixing the resulting inorganic phosphate-enriched food with one or more additional alimentary products.
