A skimmed milk powder substitute comprises an intimate mixture of: i) Total milk protein, milk protein concentrate or milk protein isolate ii) Non-fermentable sweetening and/or bulking agent iii) 0-40 weight parts of lactose per 100 weight parts of protein iv) 0-10 weight parts of fat per 100 weight parts of protein. v) One or more salts. Also described is a method for a chocolate product comprising: i) Mixing the skimmed milk powder substitute with cocoa liquor, cocoa butter and a sweetening and/or bulking agent. ii) Refining the mixture. iii) Conching the refined mixture. iv) Mixing the conched mixture with cocoa butter and lecithin v) Tempering the mixture. vi) Forming the tempered mixture into the chocolate product. Also described is a chocolate product made by the above method comprising less than 1% by weight of total fermentable carbohydrates. |
