abstract The present invention relates to new yeast. Specifically, a new yeast enriched for Vitamin D. In one aspect, the invention includes a yeast which retains its ability to develop gas after UV irradiation and which can be used in the production of bread and other baked products with significant levels of Vitamin D, especially vitamin D2. The invention also relates to a process for producing a new D2-enriched yeast as well as to methods for using the new yeast according to the invention.
