abstract There is disclosed a process for preparing a starch-containing product in particulate form. Furthermore, the product obtained and its use are described. The starting material comprises a material containing starch granules and lipids such as oatmeal or oat starch, separated from cereals. The material is flaked, energy is supplied whereby the starch granules are partially damaged to free amylose and amylopectin, after which the obtained plastic mass is dried and finally disintegrated, for example by grinding to give product particles. The starch granules may be damaged by an extender or an expander. The process may be granulation of oatmeal or a poor starchy flour. Fat can be added to the material being processed and bound to the damaged starch. The product obtained is particularly useful in nutrients such as bakery products.
