abstract Process comprises (a) forming a soln. contg. 5-80% glucose of pH 6-9 and viscosity 0.5-100 cpds; (b) keeping this soln. at 20-80 degrees C whilst passing it through a bed of linked glucose isomerase having an activity equal to >=3 IGIU/cm3 bed and a stability index of at least 50 hrs., at such a rate that up to 54% of the glucose is converted into fructose, the colouration of the converted soln. being increased by 2 units of colour and there being no substantial prodn. of psicose.
