abstract The present invention concerns a method of preparing a bread dough and a partially baked bread comprising: (a) mixing flour, water and optionally other bakery ingredients to form a bread dough; (b) optionally partially bake the dough to obtain a partially baked bread; and (c) apply an enzymatic material with proteolytic activity on the outer surface of the dough or partially baked bread. The bread dough and partially baked bread obtained by means of the present method offer the advantage that they can be baked to produce a bread product that retains crunchy crust for a considerable period of time after baking.
