The present invention is directed to novel compounds and a method for increasing or imparting a taste enhancing effect or modifying the perception of one or more of the five basic taste qualities, sweet, acid, salty, bitter and umami, to a food, chewing gum, medicinal product, toothpaste, alcoholic beverage, aqueous beverage, snack, sauce or soup comprising the step of adding to a food, chewing gum, medicinal product, toothpaste, alcoholic beverage, aqueous beverage, snack , sauce or soup an improvement in taste or modification of basic taste quality by increasing, improving or imparting the amount and concentration of at least one N-substituted unsaturated alkylamide defined according to the structures: (see formulas 3, 4, 5) . |
