abstract The present invention relates to a yeast strain, Candida lactis-condensi Mpllla that has a high invertase activity associated with the cell pack. The production of invertase by the cells of this yeast is favored when it is propagated in liquid media based on final honey and sucrose. Mpllla cells can be used to invert final honey and concentrated sucrose syrups. The invention includes a method based on the immobilization of Mpllla cells in cartridges with bagasse and other inert supports for cell immobilization, which allows in a simple and continuous way, the production of syrups inverted to 80%, when starting from 70% concentrated sucrose syrups w / w. A method for the generation of an invertase extract free from Mpllla cells, which has a high enzymatic activity, and which can be used to hydrolyze sucrose, is included in the invention. Additionally, the invention includes a method for the production of purified invertase preparations in liquid or lyophilized form from Mpllla, which possess high specific activity and allow a rapid inversion of sucrose from concentrated syrups of pure sugar or honey of different types.
