The invention relates to novel enzymes that convert sucrose to isomaltulose. More particularly, the present invention develops novel sucrose isomerases, polynucleotides encoding these sucrose isomerases, methods for isolating such polynucleotides and nucleic acid constructs expressing these polynucleotides. Also they are developed cells, cells of bacteria or particularly transformed plants and differentiated plants that comprise the cells which contain these constructions of nucleic acid. Methods for the production of isomaltulose which are the use of those also developed for polypeptides, polynucleotides, cells and plants of the invention. |
