abstract The present invention is related on the one hand with the food industry and in particular it relates to a process for obtaining protein of animal origin, characterized by comprising the following steps: a) Reception of suitable raw material and free of contamination; b) Grinding of the raw material to fine paste mesh no greater than 50 or less to generate the fluid phase with an average viscosity of 17,000 centipoise; c) inclusion of citrus oil in a 1 to 1 ratio, a unit of fluid phase of matter by a unit of citrus oil at temperatures between -10¦ C to 60¦ C, in continuous agitation for 2 to 4 hours or more , to degrease the raw material and precipitate the protein; d) Separation of the solid phase by centrifugation at room temperature; e) Presented from the separate solid phase; f) Decanting of omega III type oils and citric oil to separate them from the liquid phase, followed by a nano-filtration to obtain pharmaceutical grade omega type oils and citric oil recovery; g) Distillation to obtain the water contained in the raw material; h) Solid phase grinding with mesh not less than 325, í) Total drying by electric dryer system; j) Sterilization with ultraviolet rays and protein packaging.
