abstract |
In the present invention a process of preparing derivatives of ??-carotene such as canthaxanthin and astaxanthin is described. The process uses an in situ system to generate hypobromous acid as an oxidizing agent using sulphite, hydrogen sulfite or bisulfite salts in combination with a bromate salt. Astaxanthin and cantaxanthin are obtained in good yields with a significant reduction in reaction time. |
