The preparation and use of nucleic acid fragments encoding enzymes for the modification of vegetable fatty acid associated with the modification of the delta-9 position of fatty acids, in particular the formation of conjugated double bonds, are described. Chimeric genes that incorporate these nucleic acid fragments and regulatory sequences suitable for creating transgenic plants having altered lipid profiles can be used. The preparation and use of nucleic acid fragments encoding plant fatty acid modification enzymes associated with the formation of a trans delta-12 double bond is also described. Chimeric genes incorporating these nucleic acid fragments and regulatory sequences suitable for creating transgenic plants having altered lipid profiles can be used. |
