abstract |
An acidic foam is provided having a pH of less than about 4, and preferably about 2.5 to about 3.5. The foam is produced from a formulation that is a mixture of an emulsion component and an acid component. The emulsion component contains water, a hard fat, a sweetener, whey protein, non-ionic stabilizer, and a non-ionic emulsifier. The acid component contains an edible acid in an aqueous solution. The acid component may optionally contain a source of milk proteins and a non-ionic emulsifier. The foam is useful as a whipped cream cover that has stability in the freeze-thaw cycle and can be maintained at a refrigeration temperature for at least three weeks. |
