abstract |
The purpose of the invention is to control the increase in brine viscosity containing protein and transglutaminase, thereby improving utility; a substance that suppresses the reaction of trnsglutaminase is added to the preparation of transglutaminase at an amount such that the increase in brine viscosity can be suppressed but the activity of trnsglutaminase can be exerted after the brine is injected into meat materials. used as raw material; specifically, a saline agent containing 0.001 molea to 10 moles of an ammonium salt per 1,000 U of transglutaminase is used. |
