abstract The present invention relates to the process for making mango dressings containing as raw material the mango (Mangifera indica) paradise variety, with the degree of ripeness from scratch to firm ripe, regardless of size. Once the fruit is selected, it is passed to the washing stage with a biodegradable detergent whose main ingredients are: cleaning agents (linear anionic surfactant), water softeners (phosphates and sodium silicate), anti-redeposition agent (carboxymethyl cellulose) in a 2 solution % and let it soak for 5 minutes, the handle is removed from the wash solution and then rinsed with drinking water until the detergent used in the wash is removed, from there the handle is passed to a 0.35% sodium hypochlorite disinfectant solution, being able to use other disinfectant solutions based on iodine, silver or quaternary ammonium salts. The washed and disinfected mango is removed from the shell and bone to use the pulp in the preparation of four products: Mango Chop Dressing with Tree Chili, Mango Dressing Ground with Chili Tree, Mango Dressing with Chili Chips serrano, ground mango dressing with jalapeno pepper. Mango dressings contain between 50 and 70% of pulp, added ingredients such as spices (bay leaf, thyme, marjoram, black pepper), chilies such as jalapeƱo, tree chili, serrano pepper. The dressings can be used in the preparation of beef, pork, chicken, seafood, fish or as salad dressings. In the invention no chemicals are added that help the appearance, taste, color or preservation of dressings. So the dressings are 100% natural, organic and chemical free.
