abstract The present invention is directed to a process for preparing a soluble espresso coffee powder with a better cup foam, consisting of the following steps: (1) foaming the coffee extract by injection of gas, (2) homogenizing the foamed extract of the step (1) to reduce the gaseous bubble size to five microns or less and (3) spray drying the homogenized extract from step (2) under conditions of effective desiccant outlet temperature and spray pressure to produce a coffee in soluble espresso powder where most of the hollow space in soluble espresso powder is made up of gas bubbles that are 20 microns or less in size. The resulting soluble espresso coffee powder, after being reconstituted with hot water, produces a foam that mimics the foam formed in espresso made from roasted and ground espresso coffee.
