abstract Methods are described for converting isoflavone conjugates in plant protein materials to isoflavon-aglucones by forming an aqueous mixture of a plant protein material containing isoflavone conjugates, converting isoflavone conjugates to isoflavon-gluconas, and converting isoflavon-glucones to isoflavon. -aglucones; the plant protein material may also contain isoflavon-gluconas that are converted to isoflavon-aglucones; the isoflavone conjugates, the isoflavon-gluconas or the isoflavon-aglucones present in the plant protein material can be separated from the plant materials before, during or after the conversion procedure.
