abstract A subject of the invention is a new manufacturing process for palatinitol, in which it proceeds: in a first step, epimerization of isomaltose under conditions that allow obtaining a mixture of alpha-D-glucopyranosyl- (1 ?? 6) -D- mannose and isomaltose; in a second step, the depletion of isomaltose from this epimerized mixture in order to obtain a new mixture containing an approximately equimolar proportion of alpha-D-glucopyranosyl- (1 ?? 6) -D-mannose and of isomaltose; and in a third stage, the catalytic hydrogenation of this approximately equimolar mixture.
