abstract An elevated solids enzyme conversion procedure is presented to prepare an enzyme converted starch by adding to a modified or unmodified starch, preferably a granular starch, water and an enzyme in an amount sufficient to produce a phase powder mixture. unique without a visible phase of free water. The enzyme is activated by heating while maintaining a basically constant moisture content in the mixture. The starch converted by the enzyme is recovered as a syrup, a granular converted starch or mixtures of the foregoing, or as a powder obtained by drying the syrup.
