abstract Compositions and methods for increasing the sugar yield of harvested sugarcane are described. Antimicrobial compositions are applied to freshly cut sugarcane to increase sugar yield. Without being bound by theory, compositions containing peracids or fatty acids are believed to serve to prevent microbial contamination between harvest and processing in a mill. The antimicrobial compositions inhibit bacterial metabolic activity that converts sucrose found in sugarcane juice to dextran. Prevention of dextran production improves sucrose yields and purity in treated sugarcane.
