abstract |
A method of preparing an inhibited starch with stability during improved storage is disclosed, comprising the steps of a) providing a suspension containing a native granulated starch obtained from a starch containing starting material, b) adding at least an amino acid, or a combination of two or more of these, and at least one oxidant to the suspension with a view to inhibiting granulated starch, c) adding at least one organic acid or a bisulfite to the suspension with a view to eliminating reactive chemicals residuals, bad flavors and unwanted odor, and d) adding at least one antioxidant to the suspension with a view to stabilizing the achieved inhibition of starch during storage, in addition to an inhibited starch with stability during improved storage in storage prepared with said method, use of said inhibited starch as an ingredient in a food product and a food product or containing said inhibited starch. |
