abstract The present invention relates to a novel flavor composition for modulating the taste of a nutritional product, comprising a mixture of a single amino acid and wet polyol alkane, in which the only amino acid is selected from the group consisting of ornithine, lysine, glycine, alanine, monosodium glutamate, histidine, threonine, phenylalanine, tyrosine, serine, methionine, arginine, glutamic acid and cysteine. The invention also relates to the use of said flavor composition for the modulation of the taste and / or the shelf life of a nutritional product, the process for the preparation of such a flavor composition and a nutritional product comprising such a composition of taste.
