abstract |
Processes for the preparation of acidified milk drinks having improved stability are provided. In one aspect, the process further involves an aqueous stabilizing solution that includes HM pectin and one or more sequestering agents, to an acidified milk product to produce the acidified milk drink. One or more sequestering agents are desirably present in the aqueous stabilizing solution in a stoichiometric amount greater than the concentration of calcium ions that are in the aqueous stabilizing solution and are found in the acidified milk beverage in an amount that is stoichiometrically lower than the concentration of calcium ions in the acidified milk drink. The resulting acidified milk drink is characterized as a stable, optically opaque and drinkable product. |
