abstract The present invention relates to a composition for the preparation of a food or beverage product. The composition comprises a foam-forming ingredient that releases gas after dissolution in aqueous liquid; and an ingredient for beverages or foods comprising particles of ground material in a matrix comprising a plant extract; wherein the food or beverage ingredient has a delayed solubility such that a foam is formed by the foam forming ingredient before the food or beverage ingredient dissolves, when the composition dissolves in an aqueous liquid to produce an food or drink product.
