The present invention relates to a process for preparing solidified or crystalline maltitol. The process comprises the successive stages of liquefaction of a starch milk and saccharification of the milk of liquefied starch in the presence of alpha-amylase, beta-amylase and a de-branching enzyme selected from the pululanase, iso-amylase group and mixtures thereof, preferably , pululanase and also add maltogenic alpha-amylase and / or iso-amylase to obtain a maltose-containing syrup comprising at least 85 maltose based on dry matter and less than 1.5% glucose based on dry matter, preferably , less than 1% glucose based on dry matter, followed by molecular sieving of maltose-containing syrup to obtain a fraction (A) comprising at least 95 maltose based on the dry substance of fraction (A) and hydrogenate also, catalytically, fraction (A) to obtain a liquid product (B) enriched with maltitol. Finally, the enriched liquid product solidifies or crystallizes to prepare a solidified or crystalline maltitol. |
