The invention relates to a process for recovering betaine from raw material consisting essentially of molasses, comprising: i. a demineralization stage, where the total amount of salts in the molasses reaches a level lower than 2% by weight (over the total dry matter); ii. a conversion stage, where the molasses is subjected to the action of a fructan-forming enzyme, to form a molasses containing fructane (fructan-molasses); iii. a separation stage, where the fructan-molasses is subjected to a chromatographic separation, whereby a fraction containing betaine is obtained, where stage (i) is executed before stage (iii), and where stage (i ) can be executed before, during or after stage (ii). Alternatively, the raw material may essentially contain or consist of syrup. |
