The modified functional ingredient portion increases the micro-encapsulation efficiency and reduces the unwanted organoleptic properties of the micro-encapsulated material while providing a desired release rate. The process includes forming an emulsion in water and title the emulsion with a precipitation agent to produce a precipitate of particles.
