abstract The present invention concerns a novel insoluble powder of plants of the genus agave blue weber tequilana characterized in that it comprises: insoluble dietary fiber of the "pineapple" of the agave, total sugars, calcium, vegetable protein, fat, sodium, zinc, ash and other minerals . The invention also deals with a method for obtaining said powder and goes through the following steps: 1. Remove "pineapples" from the agave from the earth, 2. Cut the leaves, leaving the "pineapple" alone, 3. Extract juice from the " pineapples "raw and separate the resulting fiber, residue or vagazo, being of paramount importance since the juice that can generate inulin through various processes is irrelevant and without any relation to the insoluble powdered fiber, 5. Dry the resulting bagasse in the sun for 24 hrs., 6. Grind the vagasse sequentially to reduce it in a very fine powder, preferably between 0.5 to 10 microns, 7. Sanitize the agave powder with ethylene oxide gas to reduce microbial counts and thus obtain a product suitable for consumption .
