The objective of the present invention is to provide a new technique for a unique process of preparation of resistant starch (AR) or compositions, for example snacks, which comprise AR that can be added to various food systems in the form of flour, which offers the advantages of an economic process that allows preparing AR containing products of improved quality and quantity.
