abstract The invention relates to a method for the preparation of a high-fructose sugar syrup, which is put into practice with at least one fruit containing sorbitol, particularly apples, pears, plums, prunes, peaches, tangerines, Apricots, grapes, from which a first juice is extracted. This first juice is treated in order to obtain a clarified and demineralized sugar juice of less than 45 ICUMSA color, and having a conductimetric ash content of less than 0.4%. Then said clarified and demineralized sugar juice is treated in order to hydrolyze sucrose in fructose and glucose. Isomerization of glucose in fructose is performed. Sorbitol naturally present in the raw material is removed.
