abstract The present invention relates to a process for improving hydrochloric acid hydrolyzed protein, characterized by subjecting an aqueous solution thereof to gel permeation chromatography using a porous material having an average or equivalent pore diameter of between 0.5 and 2.5 nanomers and characterized by eluting a fraction that is at least free of detectable amounts of monochloropropanediols, while retaining at least 40 percent of sodium chloride.
