abstract | The present invention refers to a process for the conservation of fish, by lactic acid fermentation, characterized by mixing 72 percent of fish or any other organic material, with 17 percent of straw or other absorbent material, the fish and straw being previously ground, add 11 percent bacterial inoculum, pack in anaerobic conditions for fermentation to start; keep the fish thus treated at room temperature at approximately 20 C. for a time of not less than 15 days, to obtain the stable product for months or even years under anaerobic conditions. |
