abstract The present invention refers to the process for preparing a lacteal food for infants with a low birth weight, characterized by the following steps: clarify fresh milk, add lactic fat to clarified fresh milk, immediately add non-lactic fats to the mixture of fresh clarified milk and lactic fats; pasteurize, concentrate, homogenize and cool the milk mixture obtained; add virtually demineralized serum and essentially undenatured ultrafiltered soluble serum proteins; preheat and dry the milk mixture under powder in conditions that do not denature the proteins; mix the powder with an anhydrous glucose donor; and conditioning the food obtained in the shelter of oxygen.
