abstract The invention relates to a process for obtaining the natural dye glycoside of cyanidin, which can be used in the food and pharmaceutical industries. The process according to the invention includes extracting the dye from black ash fruits with aqueous solution containing 50% vol. Ethanol and 1, 25% mass. HCl, dilution of the extract with water, treatment with H-shaped sulfococcite at 20 ° C for 90 minutes, desorption of cationite dye under dynamic conditions with aqueous solution containing 60% vol. Ethanol and 1.5% by mass. HCl at 50 ... 60 ° C, passage of the eluate through the OH-form anionite column, its distillation in vacuo, filtration, vacuum concentration at pressure up to 100 Pa, diluting the concentrate with ethanol and drying it to the crystalline dye.
