Β-fructofuranosidase having a molecular weight of 49,000 ± 5,000 Daltons in SDS-PAGE, a 4.5 ± 0.5 coin point, an optimal pH of about 5.5 to 6.0, and an optimum temperature of about 50 ° C. in the presence of calcium ions.
