Novel maltotetraosyl glucoside crystals are prepared by crystallizing maltotetraosyl glucoside from a maltotetraosyl glucoside solution, or by acting a non-reducing saccharide producing enzyme in an aqueous solution of maltopentaose, or by trehalose or non-reducing. It is prepared by reacting cyclomaltodextrin glucanosperase to an aqueous solution containing a saccharide of.n n n This maltotetraosyl glucoside crystal has non-hygroscopic, non-reducing, excellent solubility, hard fermentation and stabilizing effect of oligopeptides and biologically active substances and prevention of degeneration of starch substances. Extremely useful in various compositions. |
