abstract | The present invention relates to a process for preparing monoglycerides or diglycerides in organic solvents using lipases. According to the method for preparing glyceride by esterification of fatty acid and glycerol according to the present invention, the molar ratio of fatty acid and glycerol is adjusted to 1: 2, and the reaction rate is enhanced by adding an inert solid powder, especially silica gel, to the organic solvent. In addition, by using lipase D for monoglycerides and lipozyme Im-46 or lipase PS for diglycerides, the temperature is controlled to reduce the solubility of monoglycerides or diglycerides in organic solvents. It can be prepared by recovering the mono- or disperselides by selective precipitation-accumulation. |
