abstract The present invention relates to a method for producing persimmon ice cream, and more particularly, to a manufacturing step of producing persimmon by aging raw persimmon at a low temperature, and mixing milk and natural sweetener in the persimmon preparation step to prepare a mixture. It consists of a persimmon processing step, a cooling step of cooling the mixture prepared through the persimmon processing step, and an ice cream mixing step of mixing the cooled mixture with the ice cream base through the cooling step. The persimmon ice cream prepared through the above process can be eaten by melting the persimmon raw material, and exhibits excellent palatability by exhibiting various tastes.
