abstract An object of the present invention is to provide a water-in-oil type emulsion composition with improved workability in the refrigeration area. As a constituent fatty acid, the lauric acid content is 7 to 29 wt%, the palmitic acid content is 7 to 19 wt%, the weight ratio of stearic acid/lauric acid is 0.1 to 1.6, and the hardness at -18 ℃ is 500 to 1500 gf in oil. Use as a water-based emulsion composition. The water-in-oil type emulsion composition of the present invention can be used without thawing or temperature control work as it is frozen distribution or cryopreserved, and can be easily cut and divided into arbitrary shapes.
