A spray-dried flavor composition is provided. The stable spray-dried flavor composition comprises an aqueous matrix comprising a filler; at least about 1% of a fatty component encapsulated in the mattress, based on the total weight of the matrix; and combinations of soluble rice bran and oat oil, which provide emulsification and improved antioxidant activity to the spray-dried flavor composition. |
