abstract The present invention relates to a method for cultivating high-quality bean sprouts using wolfberry, comprising the steps of: (a) drying wolfberry to a moisture content of 15% or less; (b) preparing the wolfberry of (a) by pulverizing to a size of 100 μm to 1000 μm; (c) preparing edible mushrooms by grinding them to a size of 20 μm to 50 μm; (d) step (b) gojija: preparing by mixing the mushroom powder of step (c) in a weight ratio of 20 to 60: 40 to 80; (e) inoculating a fermentation enzyme into the mixture of step (d); (f) fermenting the wolfberry mixture inoculated with the fermentation enzyme of step (e) at a temperature of 20 to 35° C. for 3 to 5 days; (g) mixing 10 g to 200 g of the goji japonica mixture of step (f) per 1 L of drinking water, heating at 80 to 100° C. for 1 to 3 hours, extracting and filtering; (h) adding soybeans for cultivation of bean sprouts to the goji japonica extract of step (g) and immersing them for 5 to 10 hours; (i) Gugija extract of step (g): preparing bean sprouts cultivation water by mixing 1 to 20: 80 to 99 with bean sprouts cultivation water; (j) introducing the soaked beans in step (h) into a bean sprout cultivator; (k) cultivating bean sprouts by supplying the bean sprouts cultivation water of step (i) to the bean sprouts cultivation of step (j); (l) comprising the step of packaging and commercializing the bean sprouts that have been cultivated in step (k).
