abstract In the present invention, a wild ginseng jelly yokan and a method of manufacturing the same are disclosed, which has enhanced immunity enhancing function by strengthening the wild ginseng extract. The sanyangsan ginseng jelly according to the present invention contains wild ginseng, and is prepared by mixing red ginseng concentrate, agar, starch, and collagen in a specific composition. It has excellent flavor, and excellent chewiness is improved by the combination of agar, starch and collagen, so the texture is excellent. In addition, the sanyangsansam jelly yokan according to the present invention is excellent in palatability because the taste and aroma of the active ingredients are well harmonized with each other.
