abstract The present invention relates to a process for demethylating the methyl ester of methionine or a hydroxy analog thereof and producing methanethiol as a by-product. Methionine and its hydroxy analogs are suitable as animal feed additives and food additives. Methanethiol can be consumed in the hydrothiolation step, for example in the production of methyl esters of methionine or hydroxy analogs thereof from methylvinylglycolate.
