abstract | The present invention relates to a method for determining the origin of shiitake mushrooms using a stable isotope ratio, and more particularly, to a method for discriminating dried shiitake mushrooms from Korea and China using stable isotope ratio analysis of nitrogen, carbon, oxygen and sulfur in dried shiitake mushrooms. About. In the present invention, when the isotope ratios of carbon, nitrogen, oxygen and sulfur were measured for dried shiitake mushrooms produced in Korea and China, each isotope index was calculated, δ 15 N, δ 18 O and δ 34 S of dried shiitake mushrooms. It was confirmed that the values, especially δ 15 N and δ 18 O values, showed significant differences depending on the country of origin, and the country of origin determination model using OPLS-DA analysis showed excellent predictability (Q2 = 0.892) for the determination of the origin of dried shiitake mushrooms. Since it has been confirmed that it is visible, it is possible to provide a more accurate and standard country of origin determination standard of shiitake mushrooms by using the method for determining the origin of the present invention. |
