abstract The present invention relates to a method for producing a fermented product containing high polyamines using soybean embryos.According to the present invention, soybean embryos fermented with Bacillus subtilis EE5, which is a highly polyamine-producing strain, are about twice or more than fermented products fermented with soybeans. Contains polyamines, and conventional soybean or wheat germ extracts contain a large amount of putrescine, causing an unpleasant odor, but the culture of the present invention is spermidine and spermine. Since this polyamine is a main component, it can be usefully used as a functional composition containing a high polyamine having high palatability.
