abstract | The present invention relates to a method for producing isomaltoligosaccharides using rice and an isomaltoligosaccharide having a long polymerization degree of the constitutive sugars produced thereby. Specifically, the method for producing isomaltoligosaccharide of the present invention is a method of using raw rice without crushing rice or separating starch from rice, performing saccharification and transfer processes at once, and enzymatic treatment at the optimum concentration and time. By shortening the manufacturing period of the isomaltooligosaccharide, the total isomaltooligosaccharide content can be increased by including the step of refrigerated storage after enzyme treatment, and the isomaltooligosaccharide produced by the method according to the present invention has a beneficial polymerization degree to the human body. The long content of sugar is high, so it can be useful for the development of health functional materials using isomaltooligosaccharide. |
