abstract |
The present invention relates to a method for producing germinated brown rice with increased GABA (γ-aminobutyric acid) content and antioxidant activity using calcium chloride. According to the manufacturing method of the present invention, germinated brown rice with increased GABA (γ-aminobutyric acid) content and antioxidant activity can be prepared. When using the calcium chloride, calcium ions are easily provided unlike other calcium-containing substances. It can efficiently increase the GABA (γ-aminobutyric acid) content and antioxidant activity. |
