abstract | The present invention relates to the conversion of ginsenoside Rb3 to ginsenoside Rd using beta- xylosidase derived from Panicillus usongensis , specifically, beta- xylosidase (beta) derived from Paenibacillus woosongensis -xylosidase) to a ginsenoside Rd production method characterized in that it reacts with ginsenoside Rb3, and to an enzyme composition for ginsenoside Rb conversion of ginsenoside Rb3 containing the beta-xyloxidase. According to the method of the present invention, ginsenoside Rd having excellent physiological activity can be produced very efficiently from ginsenoside Rb3. In addition, when the enzyme composition of the present invention is used, conversion of ginsenoside Rb3 to ginsenoside Rd can be performed very efficiently and easily. |
