The present invention relates to a process for preparing agarose derived from algae and its use as a prebiotic. More specifically, the present invention identifies the properties of agarotriose as a prebiotic selectively metabolized by probiotic microorganisms. Thus, agarotriose of high yield can be obtained through efficient purification that is used as an anticancer or anti-inflammatory material in food and medicine fields, and minimizes loss after enzymatic hydrolysis of red algae-derived polysaccharide without pretreatment. |
