The present invention relates to a method for manufacturing horseshoe crab using a sea breeze extract of mugwort, comprising the step of salting mackerel with salt water and the step of aging using mugwort extract. According to the present invention as described above, it is possible to produce horseradishes excellent in physicochemical properties, sensory characteristics, antioxidative activity and storage properties of mackerel, so that it can be effectively used for processing mackerel. |
